The flat bottom of this handy brewer is the key to making a consistently delicious cup, forcing water to reach all crevices of the ground coffee and developing a richer flavor along the way.

Sourcing & Processing

Dinkalem Ademe on his farm in Keffa, Ethiopia
Dinkalem Ademe on his farm in Keffa, Ethiopia

The Keffa zone of Ethiopia is considered by many to be the birthplace of coffee and claims close to 5,000 wild varietals. This sought after wush wush varietal is from a single producer, grown and processed by Dinkalem Ademe on his farm near the town of Bita in the Chena district.

Dinkalem's farm is close to 400 hectares of land, most of which is richly blanketed with famous Keffa cloud forests. Only 40 hectares are planted with coffee, currently a mix of new and old trees. Conservation of the wild forests is a major focus in Ethiopia as they store up to 600,000 tons of carbon dioxide a year and are home to many endemic species.

Dinkalem and his wife Sofiya are a couple devoted to helping their community in many different ways. Dinkalem considers himself to be a steward of the land, dedicated to the conservation of his farm's natural resources and features. He plans to create a robust outgrower’s program, linking the local smallholder farmers with domestic and international buyers, to bring economic advantages to the local towns and villages.
