Tasting Notes
Fazenda Samambaia is located near the Santo Antônio do Amparo Village in the Sul de Minas Region of Brazil. Nestled in the mountains between the Grande River Basin and the Sao Francisco River basin, the farm's rich soil, climate, and high elevation are perfect for coffee cultivation. The farm, owned by 4th generation coffee producer Henrique Dias Cambraia, is roughly 1800 hectares with 619 hectares dedicated to growing coffee. The Cambraia family has been growing coffee in the region since 1896. Henrique employs 51 full time workers and is dedicated to supporting the local community.
In recent years, Mr. Cambraia has produced a number of high scoring Cup of Excellence coffees. His passion and dedication have given him a reputation for producing consistently excellent coffee, even in difficult growing years.
Microlots are still relatively new and uncommon in Brazil where larger-scale farming operations are the norm. The smaller lots allow the workers to carefully monitor the sugar leves with a Brix refractometer to identify the ideal harvest time. This natural coffee was picked, sorted for ripeness, and then spread to dry on raised beds. Drying can take 20-25 days depending on the weather.
The flat bottom of this handy brewer is the key to making a consistently delicious cup, forcing water to reach all crevices of the ground coffee and developing a richer flavor along the way.
