This shade grown coffee comes to us from El Cuarenteño, a rural community located in the foothills of Sierra de San Juan, Mexico. El Cuarenteño is an Ejido, a community comprised of communal lands designated for agricultural production. Each Ejidatario (joint land owner/farmer) has individual rights to a parcel of land or parcela, these rights can continue indefinitely and be passed on to their children, as long as the land is under consistent cultivation.

This specific lot was produced by the 33 members of Basilio de Dios del Cuarent eño (BASILIO), a group that is focused solely on producing high quality coffee. A family-run organization, BASILIO helps its members access the more stable and profitable specialty coffee market.

Nestled atop a clearing above the small town of El Cuarenteño lies the Sandia Wet Mill. The mill has been owned and operated by the BASILIO society since the early 2000's. Most coffee from the Sandia wet mill is processed using the washed method.

This lot was shade grown at 1020 masl in rich volcanic soil. It is a mix of different varietals: 50% Catuai, 20% Caturra, 10% Typica, 10% Mundo Novo, 5% Costa Rica, and 5% Oro Azteca. The cherries were selectively picked and sorted before being floated and separated per density. A vertical drum pulper was used to remove the outer pulp and mucilage from the cherries before they were washed with clean water and spread out on patios to dry. After the drying process, the coffee was allowed to rest for an additional 16 weeks.
