Red Rooster hosts one of only two (2) Specialty Coffee Association (SCA) Certificate Training Campuses in the State of Virginia. Our SCA courses are taught on-site by Grace McCutchan, an Authorized SCA Trainer (AST). ASTs are professional trainers with the career experience and broad coffee knowledge to deliver quality courses that benefit both the learner and the industry.
SCA classes are available as they become scheduled. If you are interested in attending a course that is not currently scheduled, please contact Grace directly (grace@redroostercoffeeroaster.com) to discuss scheduling a course.
All SCA courses require a minimum enrollment of 2 students and can accommodate a maximum of 4 students.

Introduction to Coffee + Exam
Learn about coffee’s journey from its origins in Ethiopia to the major commodity it is today. From growing the cherries to brewing, this module provides an overview of the coffee value chain.

Barista Skills Foundation + Exam
Learn the practical skills you need behind the espresso bar: learn how to set your grinder, milk techniques and latte art, health and safety, customer service, and basic business practices.

Barista Skills Intermediate + Exam
Take your barista skills a step further. This course is designed for individuals who are already part of the industry, working in the field covered by the module, and have a firm knowledge of the basic skills. Experience working in the field is recommended for this level.

Barista Skills Professional + Exam
The Professional level is suitable if you want to pursue specialist knowledge at a high level as a barista or manager. Success at this level should indicate to employers competence to work in the field. Extensive relevant experience is recommended before attempting this level. Candidates must hold the Intermediate qualification in the module before attempting the professional level.

Brewing Foundation + Exam
Learn about the variety of methods for brewing coffee and the brewing variables that affect quality. The Brewing module provides hands-on learning on grind profiles & brewing methods.

Brewing Intermediate + Exam
Take your brewing skills a step further while digging deeper into Coffee Extraction and brewing variables. This course is designed for individuals who are already part of the industry, working in the field covered by the module, and have a firm knowledge of the basic skills. Experience working in the field is recommended for this level.

Brewing Professional + Exam
Dig deeper into brewing and learn how to measure coffee strength and chart a coffee’s extraction. The Professional level is suitable if you want to pursue specialist knowledge at a high level in your subject. Candidates must hold the Intermediate qualification in the module before attempting the professional level.

This 3-day class bundle is perfect for someone starting a career in the specialty coffee industry or looking to build professional credentials. It is a combination of lectures, hands-on practice, and exams designed to benefit a variety of skill levels. Whether you are starting out in specialty coffee or just want to refresh your existing knowledge with up-to-date industry trends, this class is right for you.

Barista & Brewing Intermediate + Exam
This 4-day class bundle is perfect for a learner who has already been working in the coffee industry or has a strong grasp on SCA Foundations level principles for Barista and Brewing. This class would prepare a learner to manage the coffee quality program at a busy cafe, be a shift leader, or get an in-depth look at how to measure and define coffee quality. Topics covered include Cafe Management, workflow, bar efficiency, TDS and Extraction percentage calculation, as well as identifying the impact of brewing variables on coffee. This class is a prerequisite for the Professional Level of SCA Education.

Barista & Brewing Professional + Exam
*Please note: Barista & Brewing Professional courses can only be taken if Intermediate Level class exams are passed first.
In this 5-day class bundle, you will dive deep into coffee science behind the bar and in manual brewing. Successful candidates will achieve a high level of proficiency and knowledge in workflow management, bar design, drink preparation, recipe creation, quality control, recipe adjustment, and brewing troubleshooting.
The Professional level is suitable if you want to pursue specialist knowledge at a high level in the art of being a Barista and Brewer. Success at this level should indicate to employer's competence to work in the field in a leadership or quality assurance role.
Extensive relevant experience is recommended before attempting this level. Candidates must hold the Intermediate qualification in the module before attempting the professional level.
