After picking, cherries are placed on drying beds where they’ll sit in the sun for the next 18-21 days. During the daytime, cherries are raked periodically to ensure consistent drying and they also need protection from the sun during the hottest hours of the day (12pm- 3pm). Beds are covered throughout the afternoon and again at night to protect them from the cool evening moisture.
