The Alma Negra natural process is defined by selective harvesting of only the ripest cherries. After picking, cherries are washed and spread out on patios to dry for the next 22- 27 days. Each morning the patios are turned intermittently, before being covered through the afternoon and evening. Las Lajas which is known for its exceptional drying techniques for natural and honey processed coffees, is owned by Oscar and Francisca Chacon, considered pioneers in their field. Their lots are fully traceable and separated by day.
